Wellthy Tastings April - Curry Roasted Chickpeas

Did you know April 7 is World Health Day and this year’s World Health Day theme is “My health, my right.” To celebrate our health in honor of World Health Day, we’ll be making a delicious curry roasted chickpea recipe!

Chickpeas are loaded with nutrients like a wide variety of vitamins and minerals, and a decent amount of fiber and protein. This rich plant protein option makes the perfect snack or salad topping as it is easy to make, inexpensive, and very nutritious!

Here’s what you’ll need:

  • 1 15 oz can chickpeas
  • 1 Tbsp olive oil
  • ½ tsp curry powder
  • ½ tsp turmeric
  • Salt and pepper to taste

Directions:

  1. Rinse the chickpeas in a colander. Using a paper towel, dab the chickpeas to dry them completely.
  2. Transfer the chickpeas to a bowl and add olive oil, curry powder, turmeric, salt and pepper. Toss until the chickpeas are well coated.
  3. Pour the chickpeas in an air fryer basket and air fry at 380 degrees for about 15 minutes. Make sure to shake the basket every 5 minutes until chickpeas are crunchy on the inside and golden brown on the outside!
  4. Eat them as a snack or use them as your new favorite salad topping!
